If I’m making spaghetti and meatballs, this is the one my family asks for. Made with tender chicken meatballs that are simmered in a creamy marinara sauce and the spaghetti gets tossed with the sauce and meatballs, and just soaks up all the flavors. Definitely a must try for dinner.

Creamy Spaghetti with Chicken Meatballs 🍝

Ingredients

Chicken Meatballs
• 2 lbs ground chicken
• ¾ cup Italian breadcrumbs
• ½ cup finely grated Parmesan
• 1 large egg
• ¼ cup milk
• ⅓ cup ricotta
• ¼ cup fresh parsley, finely chopped
• 2 garlic cloves, finely grated
• 1 tsp kosher salt
• ½ tsp black pepper

Creamy Marinara
• 1 tbsp olive oil
• 1 medium onion, finely diced
• 5 garlic cloves, minced
• 10–15 fresh basil leaves, torn
• 1 (32 oz) jar Rao’s marinara
• 1 cup water
• 1 tsp dried oregano
• 1 tsp kosher salt, plus more to taste
• ¼ tsp black pepper
• 1 tsp sugar
• ½ cup heavy cream
• ½ cup grated Parmesan
• 1 lb spaghetti
• ½ cup reserved pasta water, as needed
• Parmesan + parsley, for serving

Directions

1. Combine all meatball ingredients, mixing gently just until combined. Form into meatballs and set aside.
2. Heat olive oil in a large skillet over medium heat. Cook onion for 5 minutes. Add garlic and cook until fragrant, then stir in fresh basil.
3. Add marinara. Pour 1 cup water into the empty jar, shake, and add to the pan. Season with oregano, salt, pepper, and sugar. Taste and adjust salt if needed.
4. Nestle meatballs into the sauce. Cover with the lid slightly ajar and simmer 15–20 minutes, or until chicken reaches 165°F.
5. Meanwhile, cook spaghetti in salted water for 2 minutes less than package directions. Reserve pasta water, then drain.
6. Stir heavy cream and Parmesan into the sauce. Add spaghetti and about ½ cup pasta water as needed. Toss and simmer for 2 minutes.
