🍪 lil sis is off to college so let’s make her some Classic Chocolate Chip Cookies

Ingredients

2 1/2 cups All-Purpose flour
1 cup brown sugar
1 cup granulated sugar
2 egg (room temperature)
1 cup unsalted butter (melted & cooled)
2 tsp baking soda
1/4 tsp salt
1/2 cup chocolate chips or chunks 
1 tbsp vanilla paste 
1 tbsp oats (optional) 
1 tsp ground espresso

Instructions:

In a large bowl, whisk together your dry ingredients: all-purpose flour, baking soda, and salt. Set aside until ready to use.

In a separate bowl, mix the sugars and butter. Cream the ingredients for about 2 minutes or until the mixture is light and fluffy.

Once the mixture is light and fluffy, add the egg, ground coffee, and vanilla paste. Combine until you achieve a pale, creamy mixture.

Then, gradually add the wet ingredients to the dry ingredients.

When the dough is formed, gently fold in the chocolate chips/chunks and oats. 

Using a small/medium cookie scoop, scoop the cookies onto a parchment-lined baking sheet.

For bakery-style cookies, place chocolate chips/chunks on top of the cookie dough before chilling/baking.

Chill the cookies for 30 minutes to 1 hour and preheat the oven to 350°F

If prepping in advance. Chill the cookies first, then package them in an airtight container and store them in the freezer.

Once chilled, place about six cookies, spaced about 1 inch apart, onto a parchment-lined baking sheet. Using the palm of your hand, gently press the cookies to help them spread evenly in the oven.

Place the cookies in the preheated oven and bake for 10-12 minutes, until the edges are set and the cookies are a warm brown color.

Once baked, right out of the oven, gently slam the baking sheet to deflate the cookies. Let them cool on the sheet for 5 minutes before transferring them to a cooling rack.
