I’m not ready to let summer go yet. 🍑🍒 These baked apricots and cherries topped with creamy stracciatella or burrata make such a simple summer appetizer.
I just roast the fruit with olive oil, balsamic, salt, black pepper, and fresh thyme for 10–15 minutes at 400°F, then pile on the cheese. Simply delicious!
