blanch basil: boil 1 bunch basil leaves for 20 seconds, then ice bath + wring it out dry.

make simple syrup: 1 cup water + 1 cup sugar, heat until sugar dissolves then let cool.

make the syrup: blend cooled simple syrup + blanched basil until  bright green, then strain.

make your latte: ice + 3/4 oz basil syrup + 5 oz whole milk + double shot espresso. stir 😊
