The homemade protein bar that doesn’t require a baking sheet or your entire Sunday afternoon.

These organic, no-bake bars are made with peanut butter, almond flour, rolled oats, protein powder, peanuts, and goji berries for a chewy, nutty, protein-packed bite that feels more like a treat than a task.

Ingredients
1 cup peanut butter
1/3 cup maple syrup
1 tablespoon coconut oil
2 teaspoons vanilla extract
1 3/4 cups almond flour
1/2 cup rolled oats
1 scoop protein powder, optional
1/4 cup peanuts
3 tablespoons goji berries

Directions
Line an 8-by-8-inch baking pan with parchment paper.
Add the peanut butter, maple syrup, coconut oil, and vanilla extract to a microwave-safe bowl.
Microwave for 30 seconds, or until the coconut oil has melted. Stir until smooth and fully combined.
Add the almond flour, rolled oats, and protein powder, if using. Mix until well combined.
Fold in the peanuts and goji berries.
Transfer the mixture to the prepared pan. Use your hands or the back of a spoon to press it into an even layer.
Refrigerate for at least 30 minutes, then remove from the pan and cut into your desired size and shape.
Store the bars in an airtight container in the refrigerator for up to one week.

Additional Notes: 
For a more polished presentation, individually wrap the bars in parchment paper.
You can also customize the recipe by adding different nuts and seeds for extra protein, such as almonds, walnuts, pistachios, cashews, sunflower seeds, hemp seeds, or pumpkin seeds.
