color-changing cauliflower exists?! it went from purple to pink 🤯 

Today is day 6 of my “Summer Noodle Soups & Salads” series and its inspired by one of tractorfoods market sides that I couldn’t stop thinking about after ordering it the other week :) For my spin on it, I decided to add a lil’ science experiment to it - well I shouldn’t say experiment but funnnnnn hehe 👩🏻‍🔬

Ingredients:
- 1 purple cauliflower 
- 1 bag of small potatoes 

- 1/2 cup mayo
- 1/2 lemon
- 1 tbsp garlic (minced)
- 2-3 tsp curry powder 
- 1 tsp sugar 

- 1 can green lentils 
- 1/2 shallots (sliced and soaked) 
- 1/4 cup mint (chopped) 
- 1/2 cup cilantro (chopped) 
- 1/2 cup mixed nuts (chopped) 

Instructions:
1. Chop and boil potatoes first then the purple cauliflower florets (otherwise, the potatoes will get colored!) 
2. Drain and rise under cold water.
3. For the sauce, mix together mayo, lemon juice, garlic, curry powder and sugar. 
4. To assemble the salad, put the cauliflower and potatoes as the base, then add on the canned green lentils, shallots, mint, cilantro, sauce and chopped nuts. 
5. Mix together and watch the colour change happen right before your eyes!
