## Caption

Japchae is one of our all-time favorite dishes, made w/ gluten free sweet potato glass noodles that are to- die for and we served it w/Bulgogi (thinly sliced steak) ** For vegetarians sub out steak for thinly sliced shiitake mushrooms!!!!

JAPCHAE
-1 pound dried Korean sweet potato noodles @Amazon 
-5 teaspoons sesame oil 
-2 tablespoon cooking oil
-1/2 cup thinly sliced onions
-4 carrots, cut into matchsticks
-10 cloves garlic, finely minced
-5 stalks green onions, cut  1″ 
-1 lb spinach
8 tablespoons @sanjtamari gluten-free soy sauce
8 teaspoons sugar
-2 tablespoon sesame seeds

Fill a large pot with water and boil. When water is boiling, add the noodles and cook for 6 minutes. Stirring so they don’t stick together.  Drain and rinse with cold water to stop cooking. Toss with  2 tsp of the sesame oil. Use kitchen shears to cut noodles into shorter pieces, about spaghetti length.  Set aside.

Blanch spinach for 2-3 minutes. Strain. Rinse w/cold water. Squeeze out all liquid. Chop once in half.  Sprinkle with salt, 1 tsp sesame oil. 1/2 tsp salt. Mix well. Set aside.

In bowl, dissolve the sugar into the soy sauce . 

Heat a large pan on high heat w/oil. Sauté onions & garlic for 1-2 mins and remove. Repeat w/carrots & bell peppers.  Add noodles into hot empty pan on medium heat, along with the sugar soy sauce mixture.  Stir fry for a few minutes until the noodles are cooked through.  Dump veggies into the wok, mix well to combine. Cook for another 1-2 minutes. Taste. Turn off heat, toss with sesame seeds and the remaining 1 1/2 tsp of sesame oil.

Easy Beef Bulgogi (Serves 2–4)

Ingredients:
1 lb beef (tenderloin, sirloin, or skirt), thinly sliced
4 garlic cloves, minced
2 green onions, chopped
2 tbsp each:soy sauce, sugar, water
1 tbsp sesame oil & toasted sesame seeds
½ tsp black pepper

Directions:
1. Mix garlic, green onion, soy sauce, sugar, water, sesame oil, sesame seeds & pepper until sugar dissolves.
2. Add beef, mix well, marinate 30+ mins in fridge.
3. Cook on pan or grill over medium heat until caramelized & cooked through.
