For as long as I can remember, Alex has called this “summer pasta.” Whether she had a long day I wanted to celebrate this was The. She would ask me to make.  Today was her last day home before heading back to college, so I had to send her off with a little taste of summer in Seattle. Miss you, girl. theweilside 

Alex’s Summer Pasta 

Ingredients

* 3 tablespoons olive oil foodbymaria 
* 10 large garlic cloves, smashed
* 6 cups mixed-color cherry tomatoes, halved
* Kosher salt, to taste
* Freshly ground black pepper, to taste
* 1 large bunch fresh basil
* 1 pound angel hair pasta
* Freshly grated Parmesan, to taste
* 1–2 balls burrata
* Reserved pasta water, as needed
* Extra-virgin olive oil, for finishing

Directions

1. Start the sauce.
Heat the olive oil in a large stainless-steel sauté pan over medium-high heat. Add the smashed garlic and cook for about 1 minute, until fragrant.

2. Add the tomatoes.
Add the halved cherry tomatoes and season generously with salt. Toss to coat, cover, and cook for 3–4 minutes.

Uncover, stir, cover again, and repeat a couple of times until the tomatoes are soft, juicy, and beginning to collapse.

3. Smash and blend.
Use the back of a spoon or spatula to smash the softened tomatoes and release all their juices.

Once the tomatoes have broken down, use an immersion blender to blend the sauce until relatively smooth. A few tomato skins are completely fine.
4. Steep the basil.
Turn off the heat. Add the entire bunch of fresh basil to the hot tomato sauce, pressing it down into the sauce.

Let the basil steep for about 5 minutes, then remove it. Taste and adjust the seasoning with salt and freshly ground black pepper.
5. Cook the pasta.
 Cook angel hair in well-salted water until al dente. Reserve some pasta water before draining.
6. Toss until glossy.
 Add pasta to the tomato sauce, tossing with reserved pasta water until silky. Stir in Parmesan.
7. Top with burrata.
 Transfer to a serving platter and place the burrata on top.
Break open the burrata just before serving and let the creamy center run into the tomato pasta.  #tomatosauce #farmersmarket #daughters #easyrecipe #pastasauce
