Best Meatballs and Sauce we have ever made!  My Mom gifted me the Carmine’s cookbook years ago and have never made anything from it, based on the greatness of this dish we will be trying more very soon!  This is a labor of love, took about 3 hours in total start to finish.  We had some friends over last night and everyone loved it!  Recipe below Carmine’s Meatballs -3lbs Ground Beef 80/20 -1lb Ground Veal -4 Large Eggs -1/2C Seasoned Bread Crumbs -6T Chopped Flat Leaf Parsley -4T Chopped Fresh Basil -2T Kosher Salt -3 Cloves Garlic, minced -1tsp Black Pepper -4 Slices firm white bread -1C Milk -2C Romano Cheese, finely grated -2-4tsp Olive Oil -2 Spanish Onions, sliced thin -20C Marinara Sauce *Large bowl, add beef, veal, eggs, mix well then add bread crumbs, parsley, basil, salt, garlic and pepper, mix well *Separate bowl, tear bread apart, remove crust, add milk and let sit about 5 minutes, add to meat mix *Add cheese, mix well. Cover, in fridge at least 45 minutes *Ice cream scoop helps and loosely form into 3oz meatballs. Recipe make 24-30 meatballs *Large sauce pan, add olive oil, medium high heat. We used 9.5 quart Dutch oven  **Brown meatballs in batches, 10 min max, set aside **Keep all drippings in pan, add onion and garlic, let em cook 10 min, scrape up flavor in pan **Add 10C of warmed marinara sauce, add half the meatballs, add 10C sauce, add rest of meatballs **They should be fully covered in sauce, cook on med low uncovered, about 45 minutes.   **Turn off heat, let all the flavors come together for an hour or so **Serve over pasta, make a sub or just place in a bowl with sauce, parm and parsley and enjoy!   Marinara Sauce -(6) 28oz cans Whole Peeled Tomatoes, ideally San Marzano -1/2C Olive Oil -24 cloves Garlic, minced -24 Basil Leaves, chopped -4tsp Flat Leaf Parsley, chopped -2tsp Salt -Black Pepper to taste *Drain tomatoes, keep liquid *Large pot, med high, add olive oil & garlic, cook 5 minutes and scrape *Add basil, parsley, S&P, cook 30 sec *Add tomatoes, break up, bring to boil, simmer 10 min *Add reserved liquid, bring to boil for 12 min, reduce heat *Sauce is done! And it is glorious #meatballs #3piecesofpecan
