FLASHBACK MONDAY

This is the recipe that started it all. Pesto Chicken Flatbread was one of the very first dishes I posted for my original #onestopmeals series — and when it went viral with millions of views, I knew I actually had a cookbook on my hands.

Both cookbooks are restocking soon, so every Monday until then I’m re-sharing the recipes you loved most from the series. Starting with this one 👇

PESTO CHICKEN FLATBREAD
Prep: 10 min | Cook: 10 min | Total: 20 min | Serves: 6

INGREDIENTS
• 2 cups rotisserie chicken, chopped
• 1 cup pesto, divided
• 6 naan
• 12 slices mozzarella cheese
• Optional: quartered grape tomatoes + balsamic glaze, for topping

DIRECTIONS
1. Preheat oven to 425°F.
2. In a bowl, add the chicken and ½ cup of the pesto. Stir to coat.
3. Layer the naan on a sheet pan. Spread the naan with the remaining ½ cup of pesto.
4. Remove the mozzarella from the package and soak up any extra moisture with a paper towel.
5. Top the naan with the cheese slices and pesto chicken.
6. Bake for 8–10 minutes.
7. Top with grape tomatoes and balsamic glaze, if desired.

Note: you can use a whole rotisserie chicken, or Costco sells packages of hand-pulled rotisserie chicken too.
