Remember that layered salad that blew up my comments? 😅 Well… I still love it. And here’s a fresh new version that’s just as easy and delicious—yes, even if it’s layered.

Greek Trader Joe’s 7-Layer Salad:
• Arugula
• Pearled couscous
• Pickled red onions
• Cucumbers
• Cherry tomatoes
• Pistachios
• Feta
• A simple homemade Greek dressing (recipe below 👇)

And YES—you can toss it before serving if the layers stress you out. 😉

Greek Dressing:
Whisk together 1/4 cup olive oil, 2 tbsp red wine vinegar, 1 tsp Dijon, 1/2 tsp oregano, 1/2 tsp garlic powder, salt and pepper.
