Today’s #onestopmeals is a new version of a classic dish. 

Have you ever tried lasagna in soup form? It’s not far off from your classic baked lasagna, but it’s fun to combine the ingredients in a new way and cuts your prep time in half.

• Heat a large stock pot over medium-high heat and add 1 lb sweet Italian sausage and 1 diced onion. Break apart the meat and cook until the onion is translucent and the meat is cooked through.
• Add 4 frozen garlic cubes and 2 Tbsp tomato paste. Stir until combined well.
• Add 1 jar marinara sauce, 2 cartons chicken broth, 1 Tbsp Italian seasoning, 1 tsp salt, and 1/2 tsp pepper. Bring to a boil, then add 1/2 lb pasta. Cook for about 10 minutes, until al dente.
• Meanwhile, combine 1 cup ricotta, 1 cup grated Parmesan, and 1 Tbsp chopped parsley in a small mixing bowl and stir until smooth.
• Serve the lasagna soup in a bowl and top with a scoop of the ricotta mixture.

I like the Italian Artisan Gigli Pasta or Penne from Trader Joe’s, but if you can’t find it, you can substitute another pasta of your choice. You can even break apart lasagna noodles and use those.
