Ok friends. Put this Chicken in a Biscuit Pot Pie on your menu this week … and maybe just pencil it in for the remainder of the winter because it’s that good. You get all the depth of flavor and flakiness of a traditional pot pie in a fraction of the time.

My kids rated this amongst their very favorite #onestopmeals from Trader Joe’s and I know yours will love it too!

1. Heat a large skillet over medium-high heat. Melt 5 Tbsp butter, 3 frozen garlic cubes and 1 (14.5 oz) container mirepoix. Saute until tender, about 6-8 minutes. 
2. Add 1 Tbsp each of freshly chopped thyme and rosemary.
3. Add 1 tsp salt, 1/2 tsp pepper, 1 cup frozen peas, and 1/3 cup flour. Stir the ingredients to combine and cook the flour for 2-3 minutes.
4. Pour in 3 cups chicken broth and 1/2 cup half and half. Bring to a simmer and cook, stirring occasionally, until the sauce has started to thicken.
5. Chop 1 (12 oz) package grilled chicken and add it to the skillet. Pour the mixture into a 9x13” baking dish.
6. Spread 8 refrigerated biscuits evenly on top of the chicken mixture and brush them with 1 beaten egg.
7. Bake at 350 degrees for 20-25 minutes, until the top of the biscuits are golden brown. 
8. Let the pot pie rest for 5-10 minutes before serving.
