Hi Everyone! I'm Erin Collins from @meaningfuleats. I eat 100% gluten-free because of celiac disease and my blog is all about approachable, gluten-free (and mostly dairy-free) recipes. Today I'm joining my friend Brittney for her #justsavejanuary to share my top 3 tips for following a special diet on a budget!⁣

1. Go to the grocery store once a week and limit packaged foods. Having a food game-plan for the week and only going to the store once can save so much money! Those extra trips to the store really add up and if I try I can usually stretch what I already have. When you’re following a gluten-free diet it can also be tempting to buy all the packaged gluten-free crackers, cookies and snacks - but these foods are often double the price of their “regular” counterparts. The great news is MOST whole foods are naturally gluten-free and less expensive! Snacking on an apple instead of gluten-free pretzels is healthier and cheaper. ⁣

2. Make Double Batches of EVERYTHING. Chance are if you've bought the ingredients to make something once - you already have most of the ingredients to make a double batch. I love making double batches of muffins, soups, sauces, and meat to freeze for later. These Peanut Butter Banana Muffins are some of my favorite healthy muffins to keep in my freezer. You can also use Almond Butter in place of the peanut butter. Having a well-stocked freezer is also such a time/money saver!⁣

3. Embrace your true grocery costs. Even when I'm meal-planning and doing my best - our grocery bill will probably always be a little higher than it was before I started eating gluten-free. I've found it's better to just accept that we need a higher grocery budget than most families and adjust our budget in other areas accordingly. Even if we didn't have to eat gluten-free, my kids are BIG eaters and can go through a whole pack of Costco raspberries in one sitting. Do your best and embrace your true grocery costs! ⁣
