There are so many delicious foods to enjoy in the summer, but often you’re short on time from days filled with fun (but exhausting) outings. The recipe I shared is for BBQ Chicken Quesadillas. They’re quick and easy to throw together but it’s really the unexpected flavors that make this recipe a standout. Simply layer shredded BBQ chicken, Monterey Jack cheese, grilled pineapple and jalapeño slices (optional) between 2 flour tortillas and toast in a warm skillet until cheese is melted.
