It was Asian immigrants who taught America how to eat its greens.

In suburban Honolulu, 95-year-old Ruth Chang still cooks every day: steaming platters of tofu, mushrooms, and vegetables. “This food has maybe a fifth the caloric density of a hamburger and ten times the nutrients,” her family says. Chinese American women in Hawaii live about 90 years, among the longest-lived people on earth. Their secret isn’t a supplement. It’s a plate built from vegetables, tofu, and greens at nearly every meal.

From Hmong gardens in Minnesota to Khmer, Thai, and Vietnamese kitchens, the ritual is the same: pick it fresh, cook it light, and let the vegetables lead.
