## Caption

Basically a homemade mini version of a Taco Bell Crunchwrap Supreme but filled with beef and cheese. These Crunchwraps are cute, delicious, and so fun to eat!

MINI BEEF & CHEESE CRUNCHWRAPS
Makes about 20

Ingredients

* 20 fajita-size flour tortillas
* 1 tbsp oil
* ½ medium onion, finely diced
* 1 lb lean ground beef
* 1 packet taco seasoning, plus ingredients called for on the package
* 1 (16 oz) can refried beans
* ¼–½ cup water, as needed
* 2 cups shredded mild cheddar cheese
* 2 cups shredded low-moisture mozzarella cheese
* 20 round tortilla chips
* Sour cream

Directions

1. Heat 1 tablespoon oil in a skillet over medium heat. Add the onion and sauté for 2–3 minutes. Add the ground beef and cook, breaking it apart, until browned and cooked through. Add the taco seasoning and prepare according to the package directions. Remove from heat.
2. Add the refried beans to a small saucepan with a little water. Heat over medium-low, stirring and adding more water as needed until smooth and easy to spread.
3. Combine the shredded cheddar and mozzarella.
4. Place a tortilla on a flat surface. Spread about 1 tablespoon refried beans in the center, keeping the filling roughly the size of your round tortilla chip. Add 1–1½ tablespoons seasoned beef, followed by a sprinkle of cheese.
5. Place one round tortilla chip over the filling. Spread about 1 teaspoon sour cream over the chip and add another sprinkle of cheese.
6. Fold the edges of the tortilla up and toward the center, overlapping them as you go to completely enclose the filling. Repeat with the remaining tortillas and filling until everything is used.
7. Heat a skillet over medium heat. Place each Crunchwrap seam-side down first and cook until golden and sealed, about 2–3 minutes. Flip and cook the other side until golden and crispy.
