These breakfast tacos just hit different 🌮🍳🔥

These smashed egg and cheese tacos are loaded with flavor from breakfast sausage, sautéed peppers and onions, cool fresh tomatoes, tangy salsa verde, Cilantro Lime Crema crema, and salty feta cheese. Crispy on the outside, soft in the middle, and packed with fresh toppings. This is the kind of breakfast you’ll be making on repeat.

Smashed Egg & Cheese Tacos (Makes 6 Tacos)

Ingredients:

* 6 small flour tortillas
* 6 large eggs
* 1 lbs breakfast sausage
* 1½ cups shredded cheddar or Tex Mex cheese
* 1 pepper, any colour, thinly diced
* 1 small onion, thinly diced
* 1 cup diced tomatoes
* ½ cup salsa verde
* ½ cup Cilantro Lime Crema
* ½ cup crumbled feta cheese
* Salt and pepper to taste

Heat the Weber Slate and sauté the peppers and onions until softened and lightly caramelized at the same time as your breakfast sausage. Make six piles of cheese, crack an egg onto each pile, season with salt and pepper and top again with more cheese. Place a tortilla over each pile and lightly smash. Cook until the egg is set. Pile on the peppers, onions and breakfast sausage mixture. Top with diced tomatoes, salsa verde, Cilantro Lime Crema, and finish with crumbled feta.

Every bite is the perfect balance of crispy, creamy, fresh, and savory. Breakfast on the griddle doesn’t get much better than this!
