Smoked Italian Steakhouse Egg Rolls 🔥🥩

Growing up, I worked at an Italian-American-owned meat market where beef spiedini was a popular specialty. I wanted to give those Sicilian-inspired flavors a crispy, smoky twist.

Loaded with smoked beef, Genoa salami, provolone, sautéed red onion, Pecorino Romano, Parmigiano-Reggiano, garlic, parsley and seasoned breadcrumbs, then served with homemade San Marzano marinara.

INGREDIENTS

Egg rolls:
• 1¼–1½ lb top-round London broil
• Steak seasoning
• 4 oz Genoa salami, chopped
• 8 oz sliced provolone
• ½ small red onion, diced
• ½ cup plain breadcrumbs
• 3 tbsp Pecorino Romano
• 3 tbsp Parmigiano-Reggiano
• 2 tbsp fresh parsley
• ½ tsp garlic powder
• ½ tsp dried oregano
• Black pepper
• 14–16 egg-roll wrappers
• 2 tbsp flour + 2 tbsp water
• Neutral frying oil

Marinara:
• 1 can (28 oz) tomatoes
• 3 tbsp olive oil
• 3 garlic cloves, thinly sliced
• ½ tsp dried oregano
• Fresh basil
• Salt and black pepper

DIRECTIONS

1. Season the beef and smoke over indirect heat with pecan  wood chunks. Sear over the coals, rest, slice against the grain and finely chop.
2. Sauté the red onion until softened.
3. Mix the breadcrumbs, cheeses, parsley, garlic powder, oregano and pepper.
4. Combine the beef, salami, red onion, chopped provolone and breadcrumb mixture.
5. Add filling and a strip of provolone to each wrapper. Fold, roll tightly and seal with the flour mixture.
6. Chill briefly, then fry at 350°F for 3–4 minutes until golden. Drain on a wire rack.
7. For the marinara, gently cook the garlic in olive oil. Add crushed tomatoes and oregano; simmer until thickened. Finish with basil, salt and pepper.

Serve hot with marinara and freshly grated Pecorino Romano and chopped Italian parsley.

Smoked on my Weber kettle with Weber pecan wood chunks, the Elevated Cooking Grate and Drip ’N Divide, fueled by charcoal. Marinara made with  tomatoes.
