Pork tenderloin has always been a go to for me when it comes to planning dinner.  They are very affordable making it a perfect choice for a big family and they cook very quickly making it a perfect mid week meal choice.

Bacon Wrapped Pork Tenderloin

4 garlic cloves, plus 2 whole heads
5 sprigs rosemary
1 tbls fennel seeds
1½ tsp kosher salt
3 tbls olive oil, divided
Freshly ground black pepper
1 (1 1/2lb)  pork tenderloin
4 slices thin bacon
2 russet potato’s cut into 1 1/2” pieces and tossed with olive oil, salt and pepper 

Preheat oven to 425F
Chop the garlic cloves. Cut 2 whole heads of garlic in half crosswise. Strip leaves off 1 rosemary sprig, discard stem, and finely chop leaves. Finely chop the fennel seed
Mix chopped garlic, chopped rosemary, fennel seeds, salt, and 1 Tbsp. oil in a small bowl; season with pepper.
Rub garlic mixture all over the tenderloin on a baking sheet (if you have time to do this in the morning, great; chill pork until dinner)

Scatter remaining 4 rosemary sprigs in a large baking dish and set tenderloin on top. Wrap 4 bacon slices around tenderloin, tucking ends underneath so bacon stays put.

Nestle halved heads of garlic around tenderloin and drizzle with remaining 2 tbls oil. Scatter the potatoes evenly around the pork 

Roast until an instant-read thermometer inserted into thickest part of tenderloin registers 145F for medium, 30–40 minutes. Transfer to a cutting board and let rest at least 10 minutes before slicing

This @bonappetitmag recipe doesn’t call for it, but I can’t let the bits (all flavor!) at the bottom of the pan go to waste. After I take the pork and veggies off the pan, I just put the pan over a burner and add some chicken broth and a tbls or 2 of butter, scraping up the bottom of the pan to to get all the bits off. I add some of the roasted garlic to the pan as well. Season with s&p. This creates a very simple juice to pour over the pork…. If you want to thicken that sauce up, mix a tbls of cornstarch with a couple tbls of broth and add it to the pan with the broth.  Whisk it in well and let it thicken slightly.
