Reminder if it is STILL summer and this is one of my favorite ways to use heirloom tomatoes- these are tonnato cottage cheese toasts using breakstones cottage cheese. Typically, tonnato is a creamy blend of tuna, anchovies, capers, lemon juice, and good olive oil. I blended cottage cheese with a little lemon juice and olive oil, added seasoned tomatoes and then spooned some of the sauce overtop. It’s high protein and such a good summer snack ✨
