School is back in session so we will fire off some College Crockpot options.  Does not get any easier than this! -3lbs Chicken Breast -1 Onion, thinly sliced -1 Red Bell Pepper, thinly sliced -2-3 Jalapeños, thinly sliced -3 Cans Fire Roasted Rotel -3 Packs of Taco Seasoning -Mix it around, turn on high, 3-4 hours -Add a touch of water or chicken stock, I decided to add 1/2 C off camera -Shred Chicken and it is ready -Tacos, Bowls, Quesadillas, over rice……lot of ways to enjoy it! #crockpot #collegefood #backtoschool #3piecesofpecan #easymeals
