They may both be used for mattress comfort, but they feel completely different.

Memory foam = slower response, deeper contour, more of that “sink in” feeling.
Latex = responsive, buoyant, and more of a “sleep on top” feeling.

Neither is automatically better it really comes down to how you like to sleep.
