Yesterday was the boyfriend’s birthday 🎉 🎂 …. for those of you who are new here, don’t get excited and message me asking if my husband knows about my boyfriend (Yes, I get those message all the time🙄) … 33 years ago I married my boyfriend and never found a reason to change his title 😉❤️
And as always l made him his favorite birthday cake, Strawberry Shortcake.  His Mom used to make him one every year as he grew up. She passed away very young so I never had the privilege of meeting her but I love that I can honor her memory on his birthday every year by making the cake she used to make for him when he was a child.
I love simple cakes. I prefer to serve this cake plain with a big bowl of freshly whipped cream and a big bowl of strawberries. This way I can cut the cake into thick slices and let people add their own cream and berries themselves!

Strawberry Shortcake made with Buttermilk Poundcake

1 cup butter, softened
2 cups sugar
4 large eggs 
1 tsp vanilla extract
3 cups all-purpose flour
1/4 tsp baking soda
1/2 tsp salt 
1 cup buttermilk

Preheat oven to 350F. 
Combine flour and baking soda and salt in small bowl. Set aside. 

In a large bowl, cream butter and sugar until light and fluffy. Add 1 egg at a time, beating well after each addition. Add in vanilla. Add dry ingredients alternately with buttermilk and beat well. 
Pour into a greased and floured fluted tube or bundt pan. 
Bake until a toothpick inserted in the center comes out clean, about 50-60 minutes.
