120 g / about ½ cup + 1 tbsp granulated sugar
1 large egg
1 egg yolk
Zest of 1 lemon
1 tsp vanilla extract
½ tsp baking powder
¼ tsp salt

Filling

300–350 g / about 1 generous cup apricot jam
