Hail, Caesar!! Don’t buy Caesar dressing, make it at home. And the croutons, too!!! 

So here you go; homemade Caesar salad, with Parmesan croutons, and grilled chicken. Enjoy. 

-Take a few-days-old sourdough bread and cube it. In a bowl, toss the bread with olive oil, S/P, a little dried oregano, and a good about of freshly grated Parmesan cheese. You can also add other herbs like thyme or a small bit of rosemary. Lay the bread flat on a sheet tray lined with parchment paper and drizzle a bit more olive oil and a little more cheese over the top. Bake at 400 until nice and golden, around 8-12 mins. 

-For the dressing; the classical way is a wooden bowl, so if you have one use it. Start with a garlic clove, and add 2-3 anchovy fillets (don’t skip this step, and if you’re worried about picky eaters just don’t tell them). Dice the two finely, then sprinkle some kosher salt and mash into a fine paste. 

Place a tablespoon of Dijon in the bowl, add the garlic & anchovy paste, 2 egg yolks only, a half a squeezed lemon, and whisky in some quality olive oil. Grate some Parmesan cheese and mix again. The dressing should nicely coat the back of a spoon. I add a bit of cracked black pepper, too. 

-Grill chicken, salmon, or shrimp as you like. 

-Rough chop Romaine lettuce, throw right into your wooden bowl with the dressing. Mix well. 

-Transfer the salad to your serving bowl. Add the protein, croutons, and a little more freshly grated Parmesan.
