Giving it the full 8-10 minutes will separate great chat from meh bhaji - Cook your tomatoes until they’re jammy. Same reason as the previous point, letting it get here really depends the flavour - Don’t drain the vegetable boiling water because the starchiness from the potatoes acts like a glue and binds it all together - When in doubt, add less salt to start.
