This is the most delicious versatile tomato sauce you need to know!
 
With fall officially here, I’m switching gears from fresh made tomato sauces to my homemade Pomodoro sauce aka ‘red sauce’ that my kids swear by! We use it as a base for everything from Bolognese, lasagna, spaghetti & meatballs… even soup!  It works for so many things and it freezes very well! 

Tomato Basil Sauce

Ingredients

* 6 pounds canned whole peeled tomatoes lavallefoods 
* 1 cup extra-virgin olive oil 
* 20 cloves garlic, minced
* 1 whole bunch fresh basil, stems included
* Salt, to taste

1. Combine the tomatoes, olive oil, and garlic.
 Place the canned whole peeled tomatoes, extra-virgin olive oil, and minced garlic in a large pot. Season with salt to taste.
2. Simmer.
 Bring the sauce to a gentle simmer and cook uncovered for 30 minutes, stirring occasionally.
3. Purée.
 Turn off the heat. Using an immersion blender, purée the sauce directly in the pot until smooth and creamy.
4. Infuse with basil.
 While the sauce is still hot, add the entire bunch of fresh basil, including the stems. Submerge the basil in the sauce, cover the pot, and let it steep for 10–15 minutes with the heat turned off.
 Why the whole bunch?
 Traditional Italian cooks often steep the entire basil bunch, stems included. The stems contain especially aromatic oils, and keeping the basil together as a bunch makes it easy to remove before serving. For the best flavor, let the whole bunch steep gently in the hot sauce, off the heat, for 10–15 minutes.
5. Remove the basil.
 After steeping, remove the entire bunch of basil, stems and all.
6. Cool and jar.
 Allow the sauce to cool completely, then transfer it to clean jars and refrigerate or freeze as desired.
