philly cheesesteaks two ways — steak + chicken

ingredients

steak
• 1½ lbs thinly shaved beef
• Traeger Anything Rub, to taste

chicken
• 1½ lbs boneless skinless chicken thighs, thinly sliced
• Traeger Rub, to taste

peppers + onions
• 1 large green bell pepper, thinly sliced
• 2 medium red bell peppers, thinly sliced
• 1 large yellow onion, thinly sliced
• Traeger Anything Rub, to taste
• oil, as needed

spicy sauce
• ½ cup mayonnaise
• 1½ tsp vinegar
• ½ tsp sugar
• ½ tsp smoked paprika
• ½ tsp chili powder
• ½ tsp garlic powder
• ½ tsp cayenne pepper, or more for extra heat
• ⅛ tsp black pepper
• pinch of salt

for serving
• hoagie rolls
• 10+ slices American cheese, or to taste

directions

Preheat the Traeger Flatrock over medium-high heat and lightly oil the surface. Add the peppers and onions to the first section, season, and cook for 1–2 minutes.

Add the chicken to the second section, season, and cook alongside the veggies for another 2–3 minutes. Add the shaved beef to the third section, season, and cook until browned. Continue cooking the chicken until it reaches 165°F.

Divide the peppers and onions between the chicken and beef, then toss each together. Top each mixture with about 5 slices of American cheese, or more to taste. Let the cheese melt, then toss everything together. Add more cheese on top if desired.

Mix all the sauce ingredients until smooth. Toast and fill the hoagie rolls with the steak or chicken mixture and finish with the spicy sauce. Enjoy!
