Cook big wherever the road takes you: Serves 1 2 tablespoons unsalted butter 1 English muffin 4 slices bacon 2 large eggs Kosher salt and freshly ground black pepper, to taste 2 slices American cheese or Cheddar cheese Ketchup, to serve Hot sauce, to serve Coffee, to serve Toast the English muffins: Melt 1 tablespoon of butter in a medium skillet over medium heat. Add the English muffins and cook, flipping once, until toasted and golden, about 4 minutes. Set aside on a plate. Cook the bacon: Cook the bacon in a medium cast-iron skillet over medium heat until the bacon is crisp, 7 to 10 minutes. Transfer the bacon to a paper towel-lined plate. Keep the bacon warm. Carefully drain the bacon fat into a heat-proof container and wipe the skillet clean. Cook the eggs: Melt the remaining tablespoon of butter in the skillet over medium-high. Crack the eggs into the skillet and season with salt and pepper. Break the yolks and lightly scramble the eggs, leaving them looking kind of marbled. Cook the eggs until lightly set, then add the slices of cheese to the middle. Fold the edges of the eggs on top of the slices of cheese, forming a square. Lower the heat to medium-low and cook until the cheese has melted, about 2 minutes more, then transfer the eggs to the bottom piece of toast. Top the eggs with the bacon and the other piece of bread. Squirt some ketchup on your plate as well as some hot sauce an,d dip your sandwich in the sauces as you eat.
