Pumpkin Spice French Toast with Grilled Cinnamon Maple Apples

Ingredients
Pumpkin Spice French Toast
8 thick slices brioche
4 large eggs
1 cup half-and-half
2 tablespoons maple syrup
1 teaspoon vanilla extract
1 1/2 teaspoons pumpkin pie spice
Pinch kosher salt
Butter, for the griddle

Grilled Cinnamon-Maple Apples
2 large firm apples, such as Honeycrisp, Pink Lady, or Granny Smith
Vegetable oil, for lightly coating
1 tablespoon melted butter
2 tablespoons maple syrup
1/2 teaspoon ground cinnamon
Small pinch kosher salt

Cinnamon-Sugar Finish
2 tablespoons granulated sugar
1/2 teaspoon ground cinnamon

Toppings
1/3 cup chopped pecans
Maple syrup

Instructions
1. Prepare the grill for direct medium heat (350–375°F).
2. In a small bowl, whisk together the eggs, half-and-half, maple syrup, vanilla extract, pumpkin pie spice, and salt.
3. Cut each apple into eight wedges and remove the cores. Lightly brush with vegetable oil.
4. Grill the apples, cut side down, over direct medium heat. Cook until lightly charred and soft, about 5 to 7 minutes, flipping once.
5. While the apples are grilling, combine the melted butter, maple syrup, cinnamon, and salt in a medium-sized bowl.
6. When the apples are done, transfer to the bowl and toss until evenly coated. Set aside.
7. Dip each piece of brioche bread in the custard.
8. Add butter to the griddle, then cook each piece of French toast until golden brown, about 2 to 3 minutes per side.
9. In a small bowl, combine the cinnamon and sugar. Top the French toast with the cinnamon sugar, maple syrup, and chopped pecans. Serve with the apples.
