Meatball Gnocchi Soup
.

1 batch of your favorite cooked meatballs, either homemade or frozen. 
1/4 cup olive oil 
1 large onion, chopped 
3 large carrot, sliced
3 celery stalks, sliced 
4 garlic cloves, chopped 
1/2 tsp salt
1/2 tsp pepper
1 tsp dried oregano
1/4 tsp cayenne 
1/2 tsp smoked paprika 
1 (28oz) can crushed tomatoes 
1/4 cup tomato paste 
4 cups beef stock
4 cups of water
1 bay leaf
4 sprigs fresh thyme 
2 sprigs rosemary 
8 basil leaves 
1 (17 oz) package of gnocchi 
1/2 cup Italian parsley, chopped 
1/2 cup grated parmesan

In a large soup pot, saute carrot, celery, onion, and garlic in oil until softened, about 5 minutes. Add all the seasoning and saute for a minute. 
Add the tomatoes, stock, paste and water and stir until combined. Add a bay leaf and fresh herbs and bring to a boil. Add the meatballs and simmer 30 minutes. Add the gnocchi and cook 7-10 minutes more. 
Add  parsley and serve with parmesan

**Also, at the end I show how I love to serve soup in the colder months.  I get a sourdough bread bowl (many bakeries or grocery stores sell the minis… (I actually got these at @panerabread)  warm them up, hollow them out and give everyone their own bread bowl. Makes for a terrific presentation
