Beef mixture

1 lb 93/7 ground beef
6 small flour tortillas, about 6-inch
1/4 small yellow onion, very finely grated
1 garlic clove, grated
1 tbsp tomato paste
2 tbsp harissa paste
1 tbsp finely chopped parsley
1 tsp paprika
1/2 tsp ground cumin
1/4 tsp Aleppo pepper or red pepper flakes
3/4 tsp kosher salt
Black pepper

Sumac onions

1/2 small red onion, very thinly sliced
Pinch of salt
Chopped parsley
Sumac
Lemon juice

Tomato-cucumber topping

1 Roma tomato, diced
1/2 Persian cucumber, diced
2 tbsp chopped parsley
Pinch of salt
Squeeze of lemon

Yogurt sauce

1/2 cup plain Greek yogurt
1 tbsp lemon juice
1 small garlic clove, finely grated
Pinch of salt
Splash of water to loosen
