## Caption

A weeknight-friendly recipe that feels like fall! This Creamy Tomato Tortellini Soup could not be easier and it takes just 25 minutes to whip up. A great way to kick off cozy season!

Ingredients:
1 tablespoon olive oil
1 lb Italian sausage, casing removed or ground beef
1 yellow onion, diced
3 cloves garlic, minced
1 teaspoon Italian seasoning, optional
1 teaspoon kosher salt, plus more to taste
1/4 teaspoon black pepper, plus more to taste
1 24 oz jar of marinara sauce
3 cups chicken bone broth
1 10 oz package of cheese tortellini or pasta of choice*
1 cup heavy cream, half and half or canned coconut milk
Handful of spinach, optional
Freshly grated Parmesan cheese to serve

Instructions:
Heat olive oil in a dutch oven over medium heat. Add the sausage and break it up with a meat masher or wooden spoon until just browned, about 3 minutes, then add onion, garlic, salt, pepper, and Italian seasoning, stirring occasionally until the onion is translucent, 7-8 min.
Add the marinara sauce and chicken broth and stir to combine. Bring to boil over medium high heat then add the tortellini. Cover, reduce heat to medium low and simmer for 10-15 minutes until the tortellini is cooked.
Stir in the cream and spinach if using and season to taste. Serve with freshly grated Parmesan cheese on top!

Notes: Depending on the pasta you choose you may need to add more broth. When reheating leftovers, you may need to add more broth as well.
