🏈 Game Day Bites S3 Ep. 1: Chicken Parm Meatballs | everything you love about Chicken Parm packed into one game day bite. Juicy chicken meatballs stuffed with mozzarella, cooked low and slow in a fresh tomato sauce, then finished with fresh basil, parmigiano reggiano, and crispy garlicky breadcrumbs.

🐔 Meatballs 
2lbs ground chicken 
1 cup panko
1/2 cup milk
2 eggs 
4 garlic cloves, grated 
1/4 cup parsley, chopped 
Red pepper flakes 
Salt & pepper 
EVOO
Mozzarella cubes 
Freshly grated parm, as needed 
32oz your favorite tomato sauce 

🥖 Breadcrumbs 
2 tbsp butter
4 garlic cloves, grated 
1/2 cup panko 
Salt to taste 

Let the panko and milk soak for about 10 minutes, then squeeze out any excess milk. 

In a large bowl add all the meatball ingredients along with the milk soaked panko. Mix until full combined, then place in the fridge for 20 minutes to chill. 

As you roll each ball, add a cube of mozzarella to the center. Then place on a sheet tray and bake at 400° for 10-15 minutes, just until firm. 

Add a layer of sauce to the bottom of a slow cooker, followed by the meatballs, some basil, and a little more sauce. Then cook on low for 3-4 hours, or high for 1.5-2 hours. 

While the meatballs cook, add butter and grated garlic to a cold pan. Heat over medium heat and once the garlic sizzles, add the panko. Toss until the panko is golden brown and crispy. Then season with salt to taste. 

Once the meatballs are done, add a layer of sauce to a bottom of a plate, followed by the meatballs, and a little more sauce. Then garnish with the garlic breadcrumbs, fresh basil, and as much grated parm as your heart desires. Enjoy!
