A little Sunday prep for easier weekday mornings. Egg bites, blender pancakes, and smoothie bags…. all prepped with my kitchenaidusa Pure Power Blender with 62 oz Glass Jar. Three simple breakfasts ready to go, so we can spend less time scrambling in the kitchen and more time together in the mornings.

Freezer Smoothie Packs

Makes: 4 smoothie packs

For each freezer bag:
- ½ cup frozen blueberries
- ½ banana
- 1 cup spinach
- 1 tbsp peanut butter
- 1 tbsp chia seeds
- 1 scoop vanilla protein powder
- Cinnamon

Directions:

1. Add all ingredients to individual freezer bags.
2. Freeze until ready to use.
3. When ready to blend, add one smoothie pack to the blender.
4. Add 1–1¼ cups milk of choice (or almond milk).
5. Blend until smooth.

Blender Oat Pancakes

Makes: 10–12 pancakes

Ingredients:
- 2 cups old-fashioned rolled oats
- 2 ripe bananas
- 2 eggs
- 1.5 cup milk
- 2 tsp baking powder
- 1 tsp vanilla extract
- ½ tsp cinnamon
- Pinch of salt

Directions:

1. Add everything to the blender.
2. Blend for 30–45 seconds until completely smooth.
3. Let batter rest for 5 minutes.
4. Cook on a lightly greased skillet over medium heat for 2–3 minutes per side.
5. Serve with berries and maple syrup.

Meal Prep:
Cool completely and refrigerate for up to 4 days or freeze for up to 2 months.

Copycat Starbucks Cheese & Chive Egg Bites

Makes: 12 egg bites

Ingredients:
- 6 large eggs
- 1 cup cottage cheese
- ½ cup shredded Gruyère cheese
- ½ cup Monterey Jack cheese
- ¼ tsp garlic powder
- ¼ tsp onion powder
- Salt & pepper to taste
- 2 tbsp chopped fresh chives, plus extra for garnish

Directions:

1. Preheat oven to 300°F.
2. Add eggs, cottage cheese, Gruyère, Monterey Jack, garlic powder, onion powder, salt, and pepper to the blender.
3. Blend until completely silky, about 30 seconds.
4. Stir in most of the chives, reserving some for topping.
5. Grease a silicone muffin pan and fill each cavity about ¾ full.
6. Sprinkle remaining chives on top.
7. Place the muffin pan inside a larger baking pan and add hot water halfway up the sides to create a water bath.
8. Bake for 30–35 minutes, until just set.
