Even the youngest bakers can help with these adorable Iced Lemon Sugar Cookies. 🍋🐣

For the cookies:
2 sticks unsalted butter (1 cup) at room temperature
1 1/2 cups sugar
1 egg
1/4 cup Santa Cruz Organic 100% Pure Lemon Juice
1/2 tsp vanilla extract
2 3/4 cups all purpose flour
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt

For the lemon icing:
1 cup powdered sugar
2 Tbsp Santa Cruz Organic 100% Pure Lemon Juice
1 pea size drop of yellow gel food coloring

Decorations:
1 cup sweetened coconut
1 pea size drop of yellow gel food coloring
candy eyes
orange jelly beans
orange star candies

To make the cookies: Preheat oven to 350ºF. Line a baking sheet with parchment paper. In a large bowl, combine butter and sugar and beat on high with an electric mixer until light and fluffy. Add in the egg, lemon juice and vanilla extract and beat until well combined. Add in the flour baking powder, baking soda and salt and beat until well combined. Scoop dough into 1 Tbsp sized balls and roll gently in your hands to make them round. Place balls 2-inches apart on baking sheet and bake for 11 minutes until set and just barely golden on the edges. Let cool on the baking sheet for 5 minutes then transfer to a wire rack to fully cool.

Make the icing by combining all the ingredients in a small bowl and mixing well. Make the yellow coconut by placing the coconut and food coloring in a sealable plastic bag and massage until the coconut is uniformly colored.

Decorate each cookie by coating in icing, then dipping iced side into a plate of the yellow coconut, adding a jelly bean for a nose, two eyes and two stars for the feet. Let icing set 15 minutes before serving. Enjoy!
