Chipotle Chicken Grilled Cheese Crunchwraps 🌮 Crispy, cheesy, loaded with seasoned chicken and creamy chipotle sauce. Such an easy Taco Bell-inspired dinner to make at home!

Ingredients

chicken
• 1 lb chicken breast, diced
• 1 packet taco seasoning
• 2 tbsp oil, divided

chipotle sauce
• 3 chipotle peppers in adobo
• ½ cup mayo
• ½ cup plain Greek yogurt
• Juice of 1 lime
• 1 tbsp hot honey
• 1 garlic clove
• Salt & pepper

crunchwraps
• 4 extra-large burrito tortillas
• 4 tostada shells
• 4 small fajita tortillas
• Sour cream
• 1 head romaine, shredded
• 2 Roma tomatoes, diced
• ½ bunch cilantro, chopped
• 1½ cups shredded Colby Jack

Directions

1. Toss chicken with taco seasoning and 1 tbsp oil. Heat remaining oil in a skillet and cook chicken until done.
2. Blend all chipotle sauce ingredients until smooth.
3. Layer a large tortilla with chipotle sauce, chicken and a tostada. Top the tostada with sour cream, lettuce, tomatoes, cilantro and about 2 tbsp cheese.
4. Place a small tortilla on top. Fold the edges of the large tortilla inward to seal.
5. Cook seam-side down in a lightly oiled skillet over medium-low heat until golden, then flip.
6. Add about 3 tbsp cheese directly to the skillet. Once melted, place the Crunchwrap on top and cook about 1 minute, until the cheese forms a golden, crispy crust.

Serve crunchwraps with extra chipotle sauce. 🤌🏼
