Hot Honey Crispy Roasted Potatoes 🥔🔥🍯

Ingredients:

- 1 bag potatoes
- 1 tsp salt
- 1 tsp baking soda
- Vegetable oil, enough to lightly cover the bottom of the baking tray
- Mike’s Hot Honey Extra Hot, for drizzling
- Salt, to finish
- Fresh parsley, chopped
- Freshly grated Parmesan

⸻

Instructions:

Preheat the oven to 425°F. Place a baking tray in the oven with enough oil to lightly coat the bottom and let it heat for about 35 minutes.

While the oven is heating, bring a large pot of water to a boil over medium heat. Add 1 teaspoon salt and 1 teaspoon baking soda.

Cut each medium potato into 4 large pieces. Keep the pieces fairly large because they will shrink slightly as they cook.

Once the water is boiling, add the potatoes and cook for about 10–15 minutes. They should be tender enough for a knife to slide into them, but still firm enough to hold their shape.

Drain the potatoes in a colander, then shake the colander about 3 times to rough up the outside and create a starchy coating. Let them sit for a few minutes to dry slightly.

Carefully remove the hot tray from the oven and add the potatoes to the hot oil. Spread them out in a single layer.

Roast for 30 minutes, then remove the tray and turn the potatoes onto another side. Return them to the oven and continue roasting, turning them again whenever one side becomes golden brown.

Repeat this process about 3–4 times, keeping an eye on the potatoes. Some pieces may brown faster than others, so remove any pieces that are already deeply golden and crispy on all sides.

Once all the potatoes are crispy and golden brown, transfer them to a wire rack and let them cool slightly.

Arrange the potatoes on a serving platter. Finish with a generous drizzle of Mike’s Hot Honey Extra Hot, a little salt, chopped fresh parsley, and freshly grated Parmesan.

Serve and enjoy!
