Jammy, citrusy, gently spiced, and endlessly refreshing. Basically, autumn in a glass. 😉

Figment of your Imagination
1¾ oz Empress 1908 Indigo Gin
1 oz Fig Simple Syrup
Juice from ½ a Lemon
Ginger Beer, to top
Fresh Fig, for garnish
Fresh Thyme, for garnish

METHOD: 
To build the cocktail, fill a Collins glass with ice and add Empress 1908 Indigo Gin and fig syrup. Stir, then add the lemon juice. Top with ginger beer and garnish with fresh thyme and a sliced fig. Enjoy!

To make the fig simple syrup, combine sugar, water, and sliced fresh figs in a saucepan. Heat until lightly bubbling, gently mashing the figs with a wooden spoon. Remove from heat and let steep at room temperature for at least 30 minutes. Strain and cool before using.
