With 82% butterfat, it’s just enough to get a delicate, plush crumb without being greasy. And the slow-churned process yields the creamiest buttercream texture! To make a giant sheet cake in a half sheet pan (13x18”), you’ll need: 2 cups unsalted @plugrabutter 4 cups granulated sugar 4 eggs 2 tbsp vanilla extract 4 cups cake flour 4 tsp baking powder (*I reduce the baking powder slightly from the original recipe so the cake doesn’t sink) 2 tsp kosher salt 2 cups buttermilk Note: This is a bit too much batter for a full half sheet pan, so I recommend removing enough batter to make 6 cupcakes, then pour the rest into a half sheet pan lined with a generous overhang of parchment.
