If I could nominate another cake to be on the cover of Southern Living, it would be this coconut cake with the softest, most tender white cake layers, a salted coconut pastry cream, coconut caramel and toasted coconut. I think this would be perfect for Easter or any spring occasion!

If you’ve been following along, you know I love baking with @plugrabutter, especially for special occasions. Their European-style butter has a higher butterfat percentage which lends an extraordinarily rich flavor to all components of this cake–the cake layers, the pastry cream, caramel and buttercream.
