This recipe is by katrinaskitchen and it’s been my go-to ever since the sugar cookie bake off. The dough comes together SO quickly in a mixer and then you can roll out and bake (for just 6-8 minutes!). You can easily make a batch in under an hour!

For these cookies, you’ll need:

1 cup unsalted butter 
1 cup granulated white sugar
1 teaspoon vanilla extract
1/2 teaspoon almond extract (or more vanilla)
1 egg
2 teaspoons baking powder
1/2 teaspoon salt
3 cups all purpose flour
