Marry Me Chicken Hot Pocket

Ingredients

Chicken

* 2 large chicken breasts
* 1 tsp garlic powder
* 1 tsp onion powder
* 1 tsp paprika
* 1 tsp salt
* ½ tsp black pepper
* 2 tbsp butter

Marry Me Sauce

* 2 tbsp butter
* 1 medium onion, finely chopped
* 2 tbsp tomato paste
* 1 cup (240 ml) heavy cream
* ½ cup sun-dried tomatoes, chopped
* 1–2 tsp chicken powder
* ½ tsp garlic powder
* ½ tsp onion powder
* ½ tsp salt
* ¼ tsp black pepper

Assembly

* 2 sheets puff pastry
* 200–300 g mozzarella cheese
* 3–4 handfuls baby spinach
* 1 egg, beaten
* 1 tbsp sesame seeds

Instructions

1. Season the chicken with garlic powder, onion powder, paprika, salt, and pepper. Cook in 2 tbsp butter until golden and cooked through. Rest, then slice.
2. In the same pan, melt 2 tbsp butter and sauté the onion until soft. Add tomato paste and cook for 1–2 minutes. Stir in the cream and simmer until slightly thickened. Add the sun-dried tomatoes and season with chicken powder, garlic powder, onion powder, salt, and pepper. Let cool slightly.
3. Preheat the oven to 200°C. Place one puff pastry sheet on a lined baking tray.
4. Spread the sauce over the pastry, leaving a border around the edges. Layer with the sliced chicken, mozzarella, and plenty of baby spinach.
5. Place the second pastry sheet on top and seal the edges. Cut a few slits in the top, brush with beaten egg, and sprinkle with sesame seeds.
6. Bake for 25–30 minutes, until puffed and golden brown.
7. Let rest for 5–10 minutes before slicing and serving.
