Steak Frites with Sauce au Poivre

Ingredients

Steak

* 2 ribeye or striploin steaks
* Salt
* Coarsely cracked black pepper
* Neutral oil
* 2 tbsp butter
* 2–3 thyme sprigs
* 2 garlic cloves, smashed (optional)

Frites

* 3–4 potatoes
* Neutral oil for frying or roasting
* Salt
* Optional: thyme or black pepper

Sauce au Poivre

* 1 shallot, finely minced
* 1–2 tsp coarsely cracked black pepper
* 1 tbsp butter
* 200 ml cream
* 1 tsp mustard
* Pinch of chicken powder
* Salt to taste
* Small thyme sprig (optional)

Instructions

1. Prep the steak

Take steaks out of the fridge 30–45 minutes before cooking.

Pat very dry with paper towels and season generously with salt.

2. Make the frites

Thinly slice potatoes into fries.

Rinse briefly in cold water to remove excess starch, then dry very well.

For oven or air fryer

Toss with oil and salt. Cook at high heat until deeply golden and crispy, flipping halfway.

For frying

Fry once at lower heat until softened, then fry again at higher heat until crisp and golden.

Salt immediately after cooking.

3. Sear the steak

Heat a heavy pan over high heat until very hot. Add a little oil.

Place steaks in the pan and leave untouched for 2–3 minutes to build a crust.

Flip and cook another 2 minutes.

Add:

* butter
* thyme
* garlic

Tilt the pan and baste continuously with the butter for 1 minute.

Cook to preferred doneness:

* Medium rare: about 54–56°C
* Medium: about 58–60°C

Transfer steaks to a plate and rest 5–8 minutes.

4. Make the sauce

Lower heat to medium.

Add butter and shallots to the steak pan. Cook 1 minute until softened.

Add cracked black pepper and cook 20–30 seconds.

Pour in cream and stir in mustard.

Add:

* pinch of chicken powder
* salt to taste
* thyme if using

Simmer 2–4 minutes until glossy and slightly thickened.

Taste and adjust seasoning if needed.

5. Serve

Pile frites onto the plate.

Serve steak whole or sliced with sauce spooned over the top.

Finish with extra black pepper and thyme leaves.
