Big steak. Big flavor. 🥩🔥 In this Weber Grills recipe, Chef Matt Abdoo grills a thick-cut ribeye until it has a nice char. Then, he tops it with fresh chimichurri made with herbs, garlic, shallots, and red wine vinegar. The juicy steak and fresh chimichurri are a perfect pair.

Grilled Ribeye with Chimichurri
Serves: 1–2
Prep Time: 15 minutes
Cook Time: 10–12 minutes

Ingredients

Ribeye
1 bone-in ribeye steak (28–32 oz.)
Kosher salt, for seasoning
Ground black pepper, for seasoning

Chimichurri
1 cup chopped parsley
1 cup olive oil
¼ cup chopped mint
¼ cup sliced chives
¼ cup red wine vinegar
1 tsp. dried oregano
4 garlic cloves, minced
1 shallot, minced
½ tsp. red pepper flakes
½ tsp. kosher salt
¼ tsp. ground black pepper

Instructions
1. In a medium bowl, combine all the chimichurri ingredients. Mix well and set aside.
2. Clean the grill and preheat it to high heat.
3. Lightly score the ribeye to help with browning and seasoning.
4. Season the ribeye with salt and pepper.
5. Once the grill is very hot, place the ribeye on the grill at a 45-degree angle to the grates. Cook for 2 minutes.
6. Turn the steak 90 degrees and move it to a fresh, hot section of the grill. Cook for another 2 minutes.
7. Flip the steak and move it to another hot section of the grill. Place it at a 45-degree angle to the grates and cook for 2 minutes. Turn the steak 90 degrees, move it to a fresh, hot section of the grill, and cook for another 2 minutes, or until the internal temperature reaches 118°F. If the steak needs more time, move it to the low-heat side of the grill and cook for another 1–2 minutes, or until it reaches 118°F.
8. Remove the steak from the grill and let it rest for 2–3 minutes before slicing.
9. Slice the steak against the grain and serve with the chimichurri.

Enjoy!
