The sausage

Ideally use 2 large German pork bratwurst or bockwurst

For the pommes

1 medium-large russet potato, about 250–300 g
Neutral oil for frying
Kosher salt
Mayo to serve

Currywurst sauce

1 tsp neutral oil
1 tbsp finely minced yellow onion
1/2 tsp curry powder, plus more for finishing
1/4 tsp sweet paprika
Tiny pinch cayenne, optional
1 tbsp tomato paste
1/4 cup ketchup
2 tbsp water
1/2 tsp Worcestershire sauce
1/2 tsp brown sugar or honey
Small pinch salt
