Making dinner for my girlfriend…now fiancee 🥹 RECIPE 👇 🍲Lemon Orzo Soup 🍲 4 tbsp avocado oil 4 carrots, diced 4 celery stalks, diced 2 onions, diced 6 garlic cloves, minced 14 cups vegetable broth, divided 2 cups orzo 2 (15 oz) cans chickpeas, drained + rinsed 1 cup raw cashews, soaked 4-8 hrs 3/4 cup lemon juice 2 tsp turmeric 1/2 cup fresh dill Salt + pepper Saute carrots, celery + onion in avocado oil over medium heat for 10 min. Add garlic and cook 1 min. Add 12 cups broth, orzo + chickpeas. Bring to a boil, reduce to a simmer and cook uncovered about 20 min or until orzo is tender. Blend soaked cashews with remaining 2 cups broth until creamy. Stir into soup and simmer 1-2 min. Remove from heat and stir in lemon juice, dill + turmeric.
