Helping our son in college with meal prep ideas and his food budget. THIS one was an absolute banger! Super affordable, easy to make and was 100 out of 10 on taste!! @harryweil26 what do you think?!

Plus, you end up with the most savory pasta sauce left over after you assemble the baked potatoes and if you toss a box of pasta in that you’ve got another couple meals to go!

2 MEALS, 1 SAUCE: Loaded baked potatoes + pasta for later.
~55g protein per loaded potato

4 LOADED POTATOES + PASTA

4 large russet potatoes
Olive oil + kosher salt
Shredded mozzarella or cheddar

MEAT SAUCE
4 lb ripe tomatoes (any variety)
1 large yellow onion, diced
1 lb ground beef
1 lb mild Italian sausage
4 oz tomato paste
3–4 tsp kosher salt, to taste
1 tsp black pepper
1 tsp garlic powder
Olive oil

PLUS: 1 box pasta

1. POTATOES: Rub potatoes with olive oil + salt, prick with a fork and bake at 400°F for ~1 hour, until fork-tender. Remove removed from the oven and set aside.

2. SAUCE: Generously coat a large skillet with olive oil. Cut a thin slice off the bottom of each tomato and place cut-side down in the pan with the onion around them. Cover and cook over medium/medium-high for 20–30 min, stirring onions occasionally, until tomatoes are soft and skins easily peel away. Add a splash of water if needed to help steam the skin.

Remove skins and mash tomatoes into the caramelized onions. Add beef, sausage, tomato paste, salt, pepper + garlic powder. Break up and cook until meat reaches 160°F and sauce thickens slightly.

3. LOAD: Split and fluff potatoes. Add ~2 Tbsp cheese. Using a slotted spoon, scoop out the meat and divide among the 4 potatoes (~¼ lb beef + ¼ lb sausage each). Top with more cheese and broil 2–3 min until bubbly + golden.

MEAL 2: Save that tomato-onion sauce! Toss with 1 box of cooked pasta for another easy meal.
