If you have a bunch of ripe bananas staring at you from the countertop right now, here’s your sign to use them! A splash of bourbon, maple syrup, and warm spices take your usual banana bread recipe over the top for fall 🍂 Ingredients: Banana Bread: - Cooking spray - 2 large very ripe bananas, peeled - 3/4 cup packed light brown sugar - 1/3 cup unsalted butter, melted and cooled - 1/3 cup sour cream - 2 large eggs - 1 Tbsp. bourbon - 1 1/2 cups (about 6 3/8 oz.) all-purpose flour - 1 tsp. baking soda - 1/2 tsp. kosher salt - 1/4 tsp. ground cinnamon - 1/4 tsp. ground nutmeg (optional) - 3/4 cup chopped glazed pecans, divided Maple-Bourbon Glaze: - 1/3 cup maple syrup - 3 Tbsp. salted butter - 2 Tbsp. bourbon - 1 cup (about 4 oz.) powdered sugar Directions: 1. Prepare Banana Bread: Preheat oven to 350°F. Line an 8 1/2- x 4 1/2-inch loaf pan with parchment paper, allowing a 2-inch overhang on both long sides. Spray parchment with cooking spray. 2. Mash bananas in a large bowl until smooth to yield about 1 cup. Add brown sugar, butter, sour cream, eggs, and bourbon; whisk until smooth. 3. Whisk together flour, baking soda, salt, cinnamon, and nutmeg (if using) in a medium bowl; whisk flour mixture into banana mixture until fully incorporated. Fold in 1/2 cup of the glazed pecans until evenly distributed. Transfer batter to prepared pan. 4. Bake in preheated oven until a long wooden pick inserted into the center comes out with moist crumbs attached, about 1 hour. Cool in pan 15 minutes; remove from pan and transfer to a wire rack to cool completely, about 1 hour. 5. Meanwhile, prepare Maple-Bourbon Glaze: Place maple syrup in a small saucepan over medium. Bring to a simmer and cook, whisking often, until reduced by half, about 4 minutes. Whisk in butter and bourbon until completely smooth and melted. Remove from heat and add powdered sugar, whisking constantly until a smooth glaze forms, about 1 minute. Cool slightly, about 5 minutes. 6. Spoon Maple-Bourbon Glaze over Banana Bread.
